Saffron

Saffron is probably the most expensive spice in the world; because of this, it is usually sold by the gram. For you metrically-impaired folks, that's about 1/25th of an ounce, or 1/500th of a pound!

Recipes that measure by volume call for teaspoons and tablespoons (or fractions thereof), so here's a simple conversion chart:



Most saffron comes from two places, India and Spain, with the latter usually costing a bit less. It is not unusual to pay $8 per gram for Indian saffron and $6 per gram for Spanish.

Always buy saffron threads. Powdered saffron loses its flavor quickly, and may have been cut with something else (often paprika or turmeric).
