Turns out that store-bought tomato puree is nothing more than tomato paste and water. The stores around here sell the puree only in 28 ounce cans, and that’s almost always more than I need. A perfectly acceptable substitute can be made from 2 parts tomato paste to 3 parts water, and mix them together.
Another possible substitution is my tomato “base.” Hrm, I don't seem to have a web page for that; I'll have to fix that (Real Soon Now).
