Mujadara (Lentils and Rice)

4 qt sauce
5 qt saute

1 heaping	(spoon)		veg stock powder (table-type tablespoon)
				water to cover by 2 inches
1		lb		lentils
				olive oil
3		med-to-lg	onions, "half-hollywood cut"
20		oz		white mushroom pieces
150		g		minced garlic
				salt
				black pepper

in a modest amount of olive oil, cook the mushrooms; set aside

in a generous amount of olive oil, caramelize the onions (start on high
heat just until they sizzle, then turn down to gently bubbling, stirring
and turning down more as necessary)

combine the stock powder, water, and lentils; bring to a boil (coverd)
then reduce to a simmer (still covered); cook until soft, adding water
as necessary (aiming for a slightly soupy mixture)

when the onions are almost finished, add the garlic and black pepper

when the garlic is (gently!) cooked, stir in the mushrooms and remove
from the heat

combine all ingredients, add salt as needed


As prepared (when?)

4 qt sauce
saute

1	c	brown rice
4 ½	c	water
1	c	lentils
2	heads	garlic, minced
1	Tblsp	Liquid Smoke
2	med	onion, chopped large
		olive oil
		salt
½	tsp	black pepper

peel and chop onions

onions, oil in pan; cook gently (but more than lowest flame) until dark
brown; DO NOT BURN!

peel and mince garlic

rinse lentils, pick out any rocks, put in water, remove any that float;
drain

rinse the rice

rice, water in pot; cover, bring to a boil

add lentils, garlic, Liquid Smoke, salt, pepper

cover, reduce to simmer

when things are almost done, uncover if there's too much water

stir the onions into the rice/lentil mixture

4 qt sauce
saute

1	c	lentils
1	c	brown rice
1	head	garlic, minced
5	c	water
1	med	onion, chopped large
		olive oil
		salt
½	tsp	black pepper

rinse lentils, pick out any rocks, put in water, remove any that float;
drain

rinse the rice

optional: peel and mince 1 - 2 heads (yes, heads) of garlic

put rice, lentils, water (garlic) in sauce pot

cover, bring to a boil, reduce to simmer

when things are almost done, uncover if there's too much water

while lentils are cooking, saute onions in butter until deep brown; do
not burn!

stir the onions into the rice/lentil mixture
