The original recipe called for 2 Tblsp of cilantro (chopped), but this is one of the few times I disagree with Messrs. Schlesinger and Willoughby. I say leave it out.
This make a lot of relish; I suggest reducing the quantities to ⅓ or even ¼.
Goes well on black beans and rice.
