Ingredients

2 Tblsp   coriander seeds
2 Tblsp   whole cloves
2 Tblsp   whole cardamom seeds
4 Tblsp   cumin seeds
2   3 inch cinnamon sticks
2 Tblsp   black peppercorns
1   nutmeg seed

Procedure

  1. Chop the nutmeg seed into a few large pieces.

  2. In a dry saute pan, roast everything over medium heat for 4 to 5 minutes, or until the seeds start to darken and give off a distinct aroma.

  3. Let the mixture cool.

  4. Chop the nutmeg chunks and the cinnamon sticks into small pieces.

  5. Grind to a fine powder.

  6. Use immediately or store in an air-tight jar.

Notes

Is this recipe “traditional” or “authentic”? I don’t know, nor do I care; it works for me. If you want something “authentic,” go look at someone else’s website.

If you don’t have a spice grinder you can use a mortar & pestle but it’s going to take a lot longer and it’s going to be a lot of work.
