Chimichurri (Sauce)

A wonderful sauce for grilled meat.

Ingredients

10 g   dried oregano [⅓ cup]
½ tsp   crushed red pepper flakes
60 ml   boiling water [3 Tblsp]
60 g   flat-leaf parsley, minced very fine [¾ cup, 1 large bunch]
30 g   garlic, minced very fine [6 cloves]
120 ml   lemon juice [½ cup]
225 ml   neutral oil [1 cup]
  kosher salt
  black pepper

Procedure

  1. Mix the oregano, red pepper, and boiling water; mix then let stand until the water has been absorbed.

  2. Add the parsley and garlic; mix.

  3. Add the oil and lemon juice; mix well.

  4. Add salt and pepper to taste.

Notes

The original recipe called for 2 Tblsp of red pepper flakes.

The original recipe called for red wine vinegar; I hate vinegar.
