Chicken Something #1

This is something I knocked together at the last minute. If you know how to cook you don’t need to be told how to make this; if you don’t know how to cook you may find this recipe frustrating because of its lack of detail.

Ingredients

10 oz   gemelli pasta (dry)
  olive oil
1 lb   chicken, cut into chunks
1 med   onion, quartered then sliced
8 cloves   garlic, minced
  red wine
  oregano
  thyme
  red pepper flakes
  salt
  black pepper
14 oz   canned peeled whole tomatoes

Procedure

  1. Boil water (salted, if you like), then cook the pasta. Meanwhile …

  2. Heat the olive oil and brown the chicken.

  3. Add the onions, cook for a while, then add the garlic; cook until the onions are soft and the chicken is almost done.

  4. Deglaze the pan with the wine.

  5. Add the spices.

  6. Chop up the tomatoes a bit; add them to the pot (but not the can juice).

  7. Add more wine and/or juice from the can of tomatoes; adjust the seasonings.

  8. Mix in some or all of the pasta.

Notes

“Gemelli” looks like two very fat strands of spaghetti twisted together then cut into 1 ½ inch lengths.

Don’t make this too soupy; there should be more chicken and onions than sauce.
