Ingredients

2 ½ lbs   chicken, boneless, skin removed
6 oz   sausage, cut up
1 lg   yellow onion, chopped
5 cloves   garlic, chopped
28 oz   canned tomatoes, juice discarded
1   bay leaf
1 palmful   oregano
  salt
  black pepper, freshly ground
3 - 4 cups   water
1 cup   short- or medium-grain rice

Procedure

  1. Cut the chicken into large chunks and chop up the tomatoes.

  2. Put everything but the rice in the pot and simmer until the chicken is pretty close to done.

  3. Wash the rice, briefly and add to the pot; stir and return to a simmer.

  4. Cook until the rice is done.

Notes

Use a pre-cooked sausage such as chorizo, andouille, or kielbasa; if you don’t have sausage, use ham.

The original recipe called for one green pepper, diced; have I mentioned how much I hate bell peppers of any color?

For a complete one-pot meal, cut up ¾ of a pound of green beans and add them to the pot as soon as the mixture comes to a simmer.
