2 ½ lbs chicken, boneless, skin removed 6 oz sausage, cut up 1 lg yellow onion, chopped 5 cloves garlic, chopped 28 oz canned tomatoes, juice discarded 1 bay leaf 1 palmful oregano salt black pepper, freshly ground 3 - 4 cups water 1 cup short- or medium-grain rice
Use a pre-cooked sausage such as chorizo, andouille, or kielbasa; if you don’t have sausage, use ham.
The original recipe called for one green pepper, diced; have I mentioned how much I hate bell peppers of any color?
For a complete one-pot meal, cut up ¾ of a pound of green beans and add them to the pot as soon as the mixture comes to a simmer.
Difficulty: Very easy.
Time: About 90 minutes
