Spaetzle

Serves

Ingredients

2 cups   sifted flour
¾ tsp   salt
¼ tsp   nutmeg
2   eggs, beaten
¾ cup   milk (approximately)

Procedure

  1. Mix together everything but the milk.

  2. Add just enough milk to make a stiff batter.

  3. Beat well and let the mixture rest.

  4. Force the mixture through a spaetzle mill into a large pot of boiling salted water and cook until tender (about 6 minutes for al dente, 15 for zaftig).

  5. Drain, rinse, and drain again.

Notes

Seems to usually take something like 1 - 2 cups of milk.
