“Pure” Caramel Sauce

Ingredients

1 cup sugar
1 cup water, boiling

Procedure

  1. Swirl the sugar over a low heat without stirring.

  2. When all the sugar is melted, stir in the boiling water.

  3. Cook, stirring, for 3 - 4 minutes.

Notes

When you pour the water into the sugar, watch out! There's going to be a lot of hissing and spitting, and lots of steam that will burn you badly if you're not careful. (Sugar melts somewhere above 400F, so a fair bit of the water is going to vaporize very quickly. Steam causes much worse burns than boiling water.)

I call this “pure caramel sauce” to distinguish it from “caramel cream” or any of the other related sauces that have more than just sugar and water in them.
