“Pure” Caramel Sauce
Hardware
Ingredients
1 |
cup |
sugar |
1 |
cup |
water, boiling |
Procedure
- Swirl the sugar over a low heat without stirring.
- When all the sugar is melted, stir in the boiling water.
- Cook, stirring, for 3 - 4 minutes.
Notes
When you pour the water into the sugar, watch out!
There's going to be a lot of hissing and spitting, and lots of steam
that will burn you badly if you're not careful. (Sugar melts somewhere
above 400F, so a fair bit of the water is going to vaporize very
quickly. Steam causes much worse burns than boiling water.)
I call this “pure caramel sauce” to distinguish it from
“caramel cream” or any of the other related sauces that have
more than just sugar and water in them.
