1# cannellini (small white) beans, picked over and rinsed
olive oil
3# sweet sausage, casings removed
12 oz beer
2 med-lg onions, chopped
2 med bulbs (yes, bulbs) garlic, minced
basil
marjoram
oregano
thyme
crushed red pepper (light! to taste)
~12 leaves fresh sage
chopped scallions (for garnish)
cook beans 'til just soft; drain & reserve
oil if necessary
smoosh sausage with potato masher, brown, remove
deglaze pan with some of the beer
more oil, heat
cook onions 'til getting soft
add garlic, cook
add dried herbs, cook
stir in beans
add sausage, sage, rest of beer
cook 'til beer is almost gone
could substitute hot sausage; could use moe red pepper but this tastes
better not too spicy
