Black & White Chili

Ingredients

  olive oil
2 - 4 lbs   sweet Italian sausage, casing removed, chopped
2 med   onions, chopped
12 cloves   garlic, minced
  serrano peppers, seeded and minced
  oregano
  basil
  marjoram
24 oz   beer
1 lb   cooked black beans
1 lb   cooked white beans

Procedure

  1. Working in batches, brown the sausage (using oil if necessary); as each batch is finished, remove to a large holding bowl.

  2. Saute the onions until almost soft.

  3. Add the garlic and serranos and continue cooking until the onions are soft.

  4. Add the spices and cook for another minute, stirring constantly.

  5. Add the beer and deglaze the pot.

  6. Add the beans and the cooked sausage.

  7. Bring to a boil, then reduce the heat and simmer until the desired consistency is reached.

Notes

If using canned beans, drain and rinse them before putting them in the pot.

You can use dried red pepper flakes instead of fresh serranos; if you do, add them with the rest of the spices (after the sausage is browned).

In a pinch you can make this with ground beef instead of sausage – but it won’t taste as good.
