Blue Ribbon Pickles 5 lbs pickling cukes 2 lbs yellow onions 1 head garlic 2 1/2 Tblsp pickling spice 5 c white vinegar 10 c water 5/8 c kosher salt 1 7/8 Tblsp sugar 1/2 bu fresh dill - using 2mm blade, slice cukes, onions - slice garlic (by hand) - in a large pot, combine garlic, spice, vinegar, water, salt, and sugar; bring to a boil - turn off heat, add cukes, onions, dill; keep submerged with a plate and weights - cool to room temp, put in jars, chill My modifications: sugar: 1 7/8 Tblsp -> 1 Tblsp onions: 2 lbs -> 1 lbs (or even 2 -> 0) use 4mm blade for cukes To try: no dill no garlic no onions put dill, spices in cheesecloth; chill in large container; remove sachet before putting in jars (or pour into bottom of jars and pour liquid carefully?)
