11-Aug-2012 ----------- Classic Bread & Butter, p.34, _Quick_Pickles_ 7 lbs cukes = 2 1/2 recipes 1 1/2 lbs onions 7 Tblsp Kosher salt (used more, not sure how much) [ below here is 3.75x (2.5 * 1.5) ] 3 1/2 tsp celery seed 3 1/2 tsp tumeric 2 1/3 Tblsp mustard seed 1 tsp ground allspice 10 1/2 cups cider vinegar 8 2/3 cups brown sugar Used 6mm blade for cukes Sugar is less than 3.75x; they're still sweet but any less sugar and they won't be sweet enough Yield = 5 qts Fresh Dill Cucumber Pickles, p.37, _Quick_Pickles_ 6 lbs pickles 12 cups water 6 Tblsp kosher salt 1 head garlic (large) 1 handful dill fronds [ below here is 2x ] 1/2 cup pickling spice 6 cups red wine vinegar 12 cups water 1 cup kosher salt Too tart/sour, so after cooled and put up, added 2 Tblsp sugar per jar Next time: 1) NO GARLIC! 2) Sugar, 2 - 4 Tblsp Blue Ribbon Dill Slices (with Onion) 5 lbs cukes, 4mm blade 1 1/2 lbs onions, 2mm blade 1/2 bunch dill fronds Boil together: 1 head garlic, sliced thin (by hand) 2 1/2 Tblsp picling spice 5 cups white vinegar 10 cups water 5/8 cup kosher salt 1 Tblsp sugar Prep notes: 1) start boiling liquids, spices 2) trim ends, slice garlic, wash dill 3) cukes and onions in food processor (goes REALLY fast) 4) stir into pot, cool
