10 Jul 2010 ?# thighs = # pieces 08 Mar 2010: next time, start checking for done AT THREE HOURS! 30 Jan 2010: started with 25 lbs of thighs (53 pieces) used 3.1 racks in smoker can probably fit 75 pieces total pulled 28 pieces (assume 13 lbs) yield was 15c / 4 lbs 9 oz used 8 cups sauce might have needed only 7c next time, start with 6c (date?) 11 good-size thighs makes ~4 servings is this right?
