Summer Party 2019 ================= Friday ------ Cooked 20 lbs chicken thighs made ~25 cups pulled reserved ~1.5 for Opal had ~4 cups left over DO NOT scrape rub (from the skin) into the final chicken: it was too gritty and too salty; if I want more zing, make a separate rub with 0x - 0.5x salt Saturday -------- Cooked 9 racks St. Louis spare ribs (from Costco!) had ~2 racks left over Ran smoker at 225F; in at 04:30, speed at 05:45, finished at 09:15 Next time: allow 2 hours ramp up, to get the fire bricks really hot, and hopefully come back up to speed faster run at 200F
